Indian curried chicken rice

Seriously yummy! walaupun rupanya tak cantik langsung macam dalam majalah.. kalau tabur dengan coriander leaves baru berseri sikit kot. mmg dah lama teringin nak masak nasik dengan epal. akhirnya impian tercapai juga :) dan nasi ni dimasak di dalam oven. haa masa ni la nak guna periuk corningware ke cast iron tu kan? wink wink.. hasilnya adalah nasi yg masak dengan sekata dan lembut mcm mkn kat restoran tu.

Resepinya:
sambungan ingredients :
1 medium tomato, cut into 1cm pieces (tak ada tomato masa tu, umi letak sos tomato)
2 1/2 cups chicken stok (umi letak serbuk pati ayam)
fresh coriander leaves and natural yoghurt, to serve

1. preheat oven to 220/200C fan-forced. Place chicken and curry paste in a large glass or ceramic bowl. Stir to coat chicken (umi letak garam sikit).
2. Heat oil in a large frying pan over medium heat. Cook chicken, in batches, turning, for 4 minutes or until golden. Transfer to a plate.
3. Add onion to pan. Cook, stirring for 2 to 3 minutes or until softened. Add rice. Stir for 1 to 2 minutes or until rice is coated. Stir in sultanas, apple and tomato. Transfer mixture to a 10-cup capacity, 25cm (base) round ovenproof dish. Arrange chicken over rice, pressing down gently. Pour over stock. Cover tightly with foil. Bake for 45 to 50 minutes or until rice is tender and chicken cooked through.
4. Top with coriander. Serve with yoghurt.

Note : use kurma curry paste. For a spicier version, use vindaloo curry paste.

Gluten free bread

Ada sesiapa pernah try buat roti tanpa gluten (gluten free)? saja je try sbb terjumpa gluten free bread mix ni kat kedai. bila try buat guna BM, hasilnya macam nilah. tak sesedap mcm roti biasa. tp sesuai utk yg org yg mempunyai masalah kesihatan spt di bawah:




























 

Gluten free label simply means the food does not contain gluten. Gluten is a protein found in wheat, barley, rye and other similar grains. Gluten can also be used as an additive in food for flavour or to thicken and stabilize it. It is referred to as dextrin.

 

People with certain disorders cannot ingest food with gluten. Patients with celiac disease, dermatitis herpetiformis and wheat allergy, all require a gluten free diet.

 

People afflicted with celiac disease often experience symptoms such as bloating, diarrhea, abdominal cramps, farting, vitamin deficiencies, weight loss and mineral loss once gluten reaches the small intestine. This is because celiac disease can cause injury to the small intestine lining if gluten is eaten.

The way to treat this ailment is to refrain from eating any foods that contain gluten. This will enable the injured intestine lining to heal naturally.

 

This disorder is due to genetics. People with a certain gene can develop celiac disease later in life. In most cases, around 9 out of 10 people with the ailment are not even aware of their condition. This however can be determined by a routine blood test.

 

A totally gluten free diet can pose a special dilemma. It is hard to determine if some grains have gluten or not. However, the conscious effort of sticking to gluten free diet at all times can help the celiac disease sufferer immensely. Since gluten free foods are the only medically accepted cure for celiac disease, then the patient basically has no other choice except to consume only gluten free foods for the rest of his life.

 

It is beneficial for the patient to eat only those that do not have any components of wheat, barley and rye in it. If you are unsure of a certain food, it is best to consult it to a registered dietitian before including it in your diet.

 

To replace wheat in your diet, you should consider some starch and grains that are gluten free. Corn,

rice, tapioca, potatoes, corn, potato, soybeans, arrowroot, carob, taro, buckwheat, teff, chia seed, millet, amaranth, yam and quinoa are all gluten free and can be eaten at desired quantity.

Pure buckwheat which is often mistaken for a wheat is also a gluten free alternative. If the buckwheat is mixed with wheat flour then it should not be included in the diet.

Banana muffns for breakfast/tea or anytime that pleases you :)

Di suatu pagi nan indah.. datang ilham dan semangat untuk buat banana muffin.. senang dan cepat. dalam masa tak sampai sejam, dah boleh hidang untuk makan pagi atau sesuai juga untuk minum petang..

tak perlu mixer. cuma lenyekkan pisang dan gaul dengan adunan basah dan kering. lepas tu tabur granulated sugar (gula kasar) atau mcm yg sy buat, tabur dengan demerara sugar..(sila abaikan pan yg comot itu..:p)

BANANA MUFFINS
Adapted from Donna Hay
2½ cups self-raising flour, sifted
1 teaspoon baking powder
1 cup caster sugar *(adjust accordingly)
½ cup vegetable oil
1 egg
½ cup milk
1 teaspoon vanilla extract
2 over ripe bananas, mashed
Granulated sugar, for sprinkling

Preheat the oven to 180°C.  Line a 12-hole muffin tin with paper cases.

In a large bowl, add the flour, baking powder, sugar, oil, egg, milk and vanilla.  Mix well with a spoon.  Add the banana and continue to mix.

Fill the paper cases with the mixture, and sprinkle a little of the granulated sugar on top.  Bake for 30 minutes, or until a skewer comes out clean when tested.  Cool on a wire rack.

the verdict: easy-peasy.. and yummy! 


*please adjust the amount of sugar ok, because i used 1/2 cup of caster sugar and it's still sweet for me.

Mari meroti

Dah lama dok ushar BM ni.. tapi nak beli kat Msia tau2 sajalah harganya mau RM300 dan ke atas. bila datang sini pun survey2 jugak. bukannya apa, frust sangat sbb kalau nak buat roti mmg jenuh nak menguli pun tak jd gebu mcm yg beli. kemudian ada iklan kat website yg jual BM yang baru dengan harga yang murah.. apa lagi terus lah meminang hehe...

memang berbaloi beli. resepi pertama yang dicuba ialah sweet bun. untuk bun ni cuma guna BM untuk uli doh aje. senang sangat masukkan bahan2 dan terus dia uli jd doh.

Gulai munggai

Terkejut bila nampak seikat buah munggai ni dijual kat kedai. dah la masa tu kedai dah nak tutup. apa lagi terus capai dan letak dalam bakul. bila dah siap bayar semua, amik resit la nak tengok harga.. tau tak brp harganya? $8 untuk satu ikat.. ada brp ntah tak kira pulak.. telan air liur jugak la tapi dah terlanjur beli kena la masak jugak kan.. hehe.. sebelum ni pernah ternampak ada org jual kat Belmont Sunday Market tp tak teringat nak tanya pulak.


































pakai perencah kari tarbus boleh, adabi pun boleh. kalini pakai adabi sbb tarikh expired dah dekat.. hehe tarbus simpan utk next time pulak.


kikis sikit dan potong2 baru la buat gulai. jgn lupa letak udang dan parpu.. oh pecahkan telur sebiji di saat akhir.. fuhhh.. mmg sedap sangat.. mmg mewah sangat nampaknya duduk kat sini, kat KL ader? tak pernah jumpa pulak..  hmm tiba2 pulak teringat nasi lemuni. sini takde daun lemuni ke? :)

Senyum2 selalu... :)

Telur pun dah pandai senyum skrg.. mungkin gumbira melihat serba sedikit tanaman yang menjadi di musim nan panas ini
ni pokok daun kari yg jenuh tabur baja baru nak subur. daunnya besar dan lebar2 tapi tak sewangi daun yg lebih kecil dr ni... apapun setakat nak menggulai tu anytime bole petik lah

 2 pasu pokok bunga matahari.. dibeli atas permintaan dua org anak teruna.. haiyaa kita beli pokok dia pun nak jugak


dan sepasu pokok pandan.. tunggu besar sikit kot.. lgpun daun pandan frozen masih banyak lagi.. sekian dulu laporan kebun sekangkang kera kali ini..
